To start, you need to cut the salo. Cut it into small pieces about 20–25 centimeters long and 10 centimeters wide.

Peel the garlic and cut each clove into four pieces.

Every 3 centimeters along the fatback, pierce it with a knife, then put pieces of garlic into the holes, sprinkle with pepper, and place it in a container, preferably an enamel one. Pour in brine (salt + water) and put it under a press. Let it sit for at least one week.

Next, the salo can be transferred to a jar and covered with a lid, or stored in greaseproof paper.
