
Lard with Eggs
Description
A delicious appetizer for any gathering. Cooking lard with eggs is very simple. No special culinary knowledge is required to fry a magnificent fried egg dish. The most important thing to remember is that we fry the lard first and without oil! The lard releases fat and becomes more translucent and golden; then we crack the eggs into the pan and spread the whites across the pan so they cook thoroughly. Salt the eggs very carefully (it depends on how salty the lard is), and add pepper to taste. Serve the fried eggs with a piece of bread, lavash, or a pancake. Good luck, and the appetizer is ready. Serve immediately.

In a frying pan without oil, fry the lard. Do it quickly over the highest heat.

When the lard has smoked well, become translucent and golden, crack in the eggs. Add salt and pepper to taste, sprinkle with seasonings. And fry until done (whichever doneness you personally prefer). I move the pieces of lard around so the egg white spreads evenly across the pan and fries well.

I place the finished fried eggs on a small plate (I usually already have either lavash or a pancake on the plate), sprinkle with fresh herbs, and serve.
