Description
Works for both holidays and everyday meals. If you have frozen salo, you will need only 5 minutes to prepare an appetizer from it. If desired, 9% vinegar can be replaced with apple cider or rice vinegar. Serve the salo chilled. Serve the appetizer at the table.

Prepare the listed ingredients. It's best to use fatback with a small layer of meat. Peel the red onion and rinse it in water. If desired, you may substitute it with yellow or white onion.

Rinse the salo in water and pat dry with paper towels. Scrape off or trim away any parts you don't like. Place it in the freezer for 15–20 minutes until the salo is slightly frozen; this will make it easier to slice. Cut into thin slices and arrange on a plate.

Sprinkle with salt and ground black pepper. If desired, you can also use other spices and seasonings.

Slice the red onion into half-rings and place it on the salo. Drizzle everything with 9% vinegar, including the salo. Put the plate in the refrigerator for 5–10 minutes so the salo can marinate.
