
Hot-Smoked Pork Fatback
Description
Perfect with meals and drinks. For smoking, you can use pure pork fat, pork fat layered with meat, or simply meat. The most optimal option is pork fat with meat layers. This version turns out juicy, aromatic, and very tender. Store the pork fat in the refrigerator. Serve with herbs and sauce.

To prepare smoked salo, prepare all the necessary ingredients.

Pour water over all the ingredients except the pork, place over heat, and bring to a boil. Then remove from the heat and cool to room temperature.

Soak the pork in the resulting marinade so that it is completely covered. Weigh it down with something heavy and leave to marinate for 3 days.

After three days, rinse the meat in cold running water.

Hang the meat, wrapped in twine. And leave it like that for another day.

To smoke, arrange the meat on the smoker rack. Add some wood chips to the smoker (for example, alder). Cook the meat in the smoker over the fire for 50–60 minutes. Then remove from the heat and let it rest for another 15 minutes.
