
Salo Through a Meat Grinder with Garlic

Step 1

For this recipe, any fatback at all will do — everything comes down to what you prefer. First, trim the rind off the fat and grind it twice in a meat grinder.

Sprinkle the minced/over-ground pork fatback with salt and freshly ground black pepper to taste.

Now mince the garlic and add it to the salo. In the recipe I’ve given an approximate amount of garlic, because not everyone likes a large quantity of it. Personally I always add garlic generously—in my opinion both the taste and the aroma are better that way.

Next, it’s time for the fresh herbs. Chop them and also add them to the bowl with the lard.

Add red pepper. If you don’t like spicy food, you can omit the red pepper from the recipe; it still turns out very tasty without it.

Now we mix everything thoroughly and wrap our pork fat in plastic wrap. We send it to the refrigerator, and in a couple of hours we can already start tasting it.
