
Winter Bean Salad
Description
Homemade preserves keep for a long time. I will explain in more detail below. Store in a cool, dark place.

Prepare all the ingredients.

Soak the beans in water beforehand for 8–10 hours. You can leave them overnight.

After that, rinse the beans, transfer them to a pot, and cover with clean water. Boil until tender, about 60–80 minutes.

Dice the onion, and cut the tomatoes and bell pepper into medium-sized slices. Peel the carrots and cut them into matchsticks or sticks.

Heat a heavy-bottomed pot or deep skillet over medium heat. Sauté the onion in a little vegetable oil, then add the carrots. Cook until tender and golden.

Add the bell pepper and sauté for a couple of minutes, stirring. Then add the tomatoes. Simmer until they release their juice and soften.

Add the beans. Season with salt, add all the spices and sugar. Simmer the beans for 20–30 minutes until tender.

Finely chop the parsley, peel the garlic and press it through a garlic press. Add the parsley and garlic to the beans. Pour in the vinegar and cook for another 5 minutes over medium heat.

Pack the finished salad into clean sterilized jars. Seal tightly with the lids, turn upside down, and wrap in a towel. Leave until completely cooled, then store in a cool place.
