
Winter Salad with Fish
Description
This recipe for a winter fish salad lets you make it in two ways. In the first case, it will be a salad proper if you add tomato juice sparingly, simply stew the mixture, and then seal it in jars. Or, in the other version, as I did—I poured in a large amount of juice. It made quite a lot and turned out rather thin, but it was still very tasty! So I will tell you how to make a winter fish salad, and I recommend you prepare it. The jars keep for up to a year in a cool place.

1. Soak the pearl barley in hot water and let it swell completely. Meanwhile, clean the fish of bones and skin, and boil it in lightly salted water.

2. Finely chop the onion and carrot, or blend them in a blender. Meanwhile, boil the tomatoes for 20 minutes.

3. Fry the onion and carrots in vegetable oil until golden. Then add the tomatoes, pearl barley, fish, salt, and sugar. Fry everything together, add the tomato juice, and bring to a boil.

4. Add the vinegar 10 minutes before it’s done. Then pack into sterile jars and seal for winter storage. Done!
