
Winter cucumber salad
Description
A homemade winter preserve. Winter cucumber salad is a preserve that’s very easy and simple to make. The flavor is reminiscent of pickled gherkins (slightly sweet). However, the finished cucumber salad can be served as a salad on its own, as an appetizer, or as a side to the main course. It pairs especially well with potatoes and fried meat. Winter cucumber salad is a real lifesaver in the cold season, when you can’t find decent fresh vegetables at a reasonable price. That’s when these miracle preserves come to the rescue. But you need to make your winter supplies now—in summer :) I recommend this recipe; I’ve tried it myself, and so have many of my friends—everyone loves it. Good luck. Store in a cool, dark place.

Let's prepare all the necessary ingredients.

Cut the cucumbers in half lengthwise, then into half-moons. If the cucumbers are large, cut them into quarter-moons.

Chop the onion.

Finely chop the fresh herbs.

Cut the garlic into thin slices. Do not press it through a garlic press under any circumstances.

Place all ingredients except the vinegar in a convenient container.

Mix everything thoroughly with your hands!

Leave all the ingredients alone for about an hour. The vegetables should release their juice and soften slightly.

Then place the prepared mixture on the heat and bring to a boil. Before everything starts to boil, add the vinegar and stir. Let the contents of the pot boil for about 15 minutes. During this time, the cucumbers will change color. Stir the contents several times while cooking.

Then pack the salad into sterile jars and seal. Turn upside down, cover with a blanket, and leave to cool that way.
