
Carrot salad for winter
Description
A simple way to prepare ahead for storage. I’ll go into more detail below. Jars keep for up to a year in a cool place.

Step 1

Prepare all the ingredients. Wash all vegetables beforehand and pat them dry.

Peel the carrots, grate on a Korean-style carrot grater or cut into thin strips.

Cut the tomatoes into quarters. Slice the onion into half-rings, remove the seeds from the bell pepper, and cut it into medium-sized slices.

Transfer the prepared vegetables to a heavy-bottomed pot.

Add salt, bay leaf, sugar, and ground black pepper.

Pour in the vegetable oil. Mix everything together.

Bring to a boil and over medium heat simmer the vegetables for 30 minutes until they release their juices.

Then add the vinegar, stir, and cook for another 10 minutes.

Pack the finished hot salad into clean sterilized jars.

Tightly screw on the lids, wrap in a towel, and leave until completely cooled.
