Winter Bean and Bell Pepper Salad

Description

A simple way to prepare ahead for storage. For winter, it’s best to sterilize the bean and bell pepper salad so it won’t give you any “fireworks” and will stay tasty longer. I use medium-sized white beans, but I think the recipe will work with other bean varieties too. If you like a bit of heat, add a small hot pepper while stewing, or make a few “spicy” jars and mark them somehow. The jars keep for up to a year in a cool place.
