Wash the eggplants and cut them into large slices. Transfer to a deep bowl, salt, and mix. Let stand for 30 minutes so the eggplants release their liquid.

After that, rinse the eggplants in cold water, gently squeeze them, and let the excess liquid drain off.

Cut the onion into half-moons, the bell pepper into thin strips, and the tomatoes into large cubes.
