Description
The dish is prepared without unnecessary complications. I found the recipe for stewed Baltic herring in a magazine. When I cooked it for you, I forgot to take a photo of the result. So I used an old photo of mine, where I was stewing herring with olives. Although I don't like olives, I wanted to please my husband at that time. Now I cook stewed herring with vegetables. It's tasty and simple. The finished dish can be served at the table.

Wash and peel all the vegetables. Grate the carrots and celery on a coarse grater. Finely chop the onion. Cut the tomatoes into wedges, but set them aside for now. Place the onion, celery, and carrots into a frying pan with vegetable oil. Simmer over medium heat.

Wash and gut the smelt. It's better to cut off the heads. Place them with the vegetables.

Now add the tomatoes. Season with salt to taste and cover with a lid. Let it simmer until the saury is fully cooked, about 20 minutes. Then uncover, sprinkle the stewed saury with fresh herbs, and cook for another 5 minutes.
