
Saxon cookies
Description
Homemade baking for tea. Saxon cookies are quite easy to make, and they will dress up a tea or coffee table. If you liked these “little swirls” as much as I did, check out the step-by-step recipe and bake with pleasure. Serve cooled or slightly warm.

Prepare the ingredients.

Prepare shortcrust pastry. Put the flour, salt, sugar, vanilla sugar, and lemon zest into the blender bowl.

Add cubed chilled butter; pulse until crumbly.

Add an egg to the shortcrust crumb mixture and knead the dough.

Knead the dough only briefly, so it is not in contact with your hands for a long time and the butter does not start to melt.

Divide the dough into 2 equal parts.

Mix 2 tablespoons of milk and cocoa powder.

Place the cocoa mass on one of the portions and fold it into the dough until smooth and even.

You should end up with 2 balls of dough.

Roll out the light dough into a thin rectangular sheet about 3 mm thick.

Roll out the cocoa dough into a rectangular sheet the same size as the light dough. Brush the dough with egg white and place the previously rolled light sheet on top. You can alternate the layers in either order; it doesn’t matter.

Carefully roll both sheets of dough into a log, wrap in plastic wrap, and place in the freezer for 40–60 minutes.

Slice the chilled dough into slices about 1 cm thick. Place on a baking sheet and bake the cookies at 180 degrees for 15–20 minutes.
