
Saithe in foil in the oven
Description
The dish is prepared without unnecessary complications. The special vegetable bed adds a unique touch to the recipe, allowing the fish to absorb all the juices and aromas. Instead of saithe, you can use any other fish, as well as different parts of the fish (fillets, pieces, or steaks). The cooked fish can be served as a standalone dish, since it's prepared together with vegetables, or accompanied by neutral sides such as rice or potatoes. 1. Wash and clean the fish, pat dry with paper towels, cut into small pieces, and transfer to a bowl. Mix lemon juice with fish seasoning and rub each piece. Place in the refrigerator to marinate for 30–40 minutes. 2. Peel and wash the carrot, then cut into thin strips. Peel and wash the onion, then slice into rings (or half-rings). 3. Place the vegetable bed onto a sheet of foil, then arrange the marinated fish pieces on top along with bay leaves. Wrap the foil tightly to ensure all juices remain inside. 4. Place the foil packet into a preheated oven at 180°C (356°F) and bake for 40 minutes. Let the cooked fish cool slightly before serving. The dish is now ready to be served.
