Prepare the starter. Place the starter culture into a bowl, add water and mix thoroughly. Add flour and mix. Cover the bowl with plastic wrap and let it sit at room temperature for 8 hours.

Transfer the starter to a bowl, add sugar, salt, eggs, and sifted flour. Knead the dough for 5-7 minutes. Add softened butter shortly before the end of kneading. The dough will be sticky and elastic.

Shape the dough into as round a form as possible and cover with a lid. Leave at room temperature for 2 hours. Place the dough onto parchment paper in a pan and evenly spread it with hands greased with butter.

Using your fingertips, make indentations all over the surface of the pie, trying to reach the bottom. Prepare the filling. Mix sour cream with egg and spread evenly over the dough.

Using a spatula, press down on the dough across the entire surface and generously sprinkle the tart with brown sugar. Place small pieces of butter on top of the dough.

Place the pie pan in a cold oven and bake for 30-35 minutes at 190 degrees. Let the baked pie cool completely on a wire rack.
