Wash the chicken thoroughly, then cut it into pieces. Place the chicken pieces in a baking dish greased with vegetable oil and cover with foil.

Place the dish in an oven preheated to 200°C for 30 minutes. Then remove the foil and return the chicken to the oven for 15 minutes.

Grind the nuts in a blender.

Then add the garlic and 1 tsp of adjika to the blender.

In a small bowl, mix the nut crumbs and the garlic-adjika paste.

Bring chicken broth or water to a boil.

Next, add one cup of broth at a time to the nut mixture, stirring carefully and constantly. Reserve 1/4 cup of broth for seasoning.

In a small bowl, mix all the seasonings—utskho-suneli, saffron, the remaining adjika, and ground coriander—and add 1/4 cup of broth. Mix well until smooth.
