First, you need to make the satsivi paste. It's simple: grind the nuts and garlic through a meat grinder, add spices, pour in vinegar. While stirring, gradually add cold water. As soon as the paste reaches the desired consistency, stop adding water. The result should be a paste like in the photo.

We wash the cauliflower, separate it into florets, put it into boiling water, and cook for 10 minutes.

Chop the onion coarsely and fry in oil until golden brown. Assemble the appetizer: place the fried onion on a serving dish, top with cauliflower, and pour the sauce over it. If desired, garnish with fresh herbs and pomegranate seeds. Satsivi with cauliflower is ready!
