Description

This dish will surely delight fish lovers. The delicious Georgian sauce will give the fish a new flavor and aroma. It's best to prepare this dish in the evening, letting it marinate overnight—the fish will absorb the sauce, making the dish incredibly tasty. This simple fish satsivi recipe allows even a beginner cook to create a culinary masterpiece—I can't call it anything else. Regarding the herbs: you can finely chop them and add to the sauce at the final cooking stage, or sprinkle the chopped herbs over the dish before serving.     Clean the fish, cut off the head, tail, and fins. We will need them for the broth.

    Peel the carrot, onion, and celery root. Place the vegetables, fish fins, tail, and head into a small pot. Add a pinch of salt and a bay leaf. Pour in a small amount of water and cook to make a broth.

    We fillet the remaining part of the fish carcass and cut the fillet into small pieces. Lightly season with salt and pepper.

    Peel the onion and cut it into small cubes.

    Sauté the onion in butter until golden. As soon as the onion turns golden, add the flour, mix well, and fry for another 5–7 minutes.

    While the onions are frying, you can prepare the nuts. Grind them finely together with garlic, coriander, and paprika. Then mix with wine vinegar and wine. This will result in a paste like this.

    Add fish broth, about 1.5 cups, to the pan with onion and flour. Stir until smooth, making sure there are no lumps, and bring to a boil. Then add the walnut mixture, black pepper, cloves, cinnamon, khmeli-suneli, salt, and wine. Simmer for 10–15 minutes.

    Lightly coat the pike-perch fillet in flour and fry in vegetable oil until cooked through.

    Pour the sauce over the fried fillet and let it simmer for about 7-10 minutes. Then remove from the heat and let it cool and infuse.
