Chicken satsivi with walnuts

Description

Homemade sauce is easy and quick to prepare. The dish name "satsivi" comes from the Georgian word for "cold," meaning the dish is served cold. When the chicken, covered in walnut sauce, cools to room temperature, the flavors blend together, the sauce thickens, and the dish develops its unforgettable taste. Serve chilled or at room temperature.

    In a large saucepan, combine the first 8 ingredients, bring to a boil and simmer the marinade over low heat for 10 minutes, until the sugar and salt are completely dissolved. Let the marinade cool to room temperature.

    Wash the chicken thighs, place them in the marinade, cover with plastic wrap, and refrigerate overnight.

    Place the chicken pieces on a baking sheet and rub the mixture of salt and pepper under the skin. While the oven heats up to its maximum temperature, leave the chicken at room temperature.

    Grind all the dry spices in a mortar, except for red pepper and salt. Rub the minced garlic with a tablespoon of salt.

    Place the dry spices, garlic, nuts, and 0.5 cup of chicken broth into the blender jar. Process the mixture for one minute.

    In a heavy-bottomed skillet, heat the vegetable oil and sauté the onion until translucent. Add the red pepper and the remaining 0.5 teaspoon of salt, and cook for 1 minute to blend the flavors.

    Place the nut mixture into a skillet, stir, then slowly add the remaining chicken broth and mix everything. Bring the mixture to a boil, then reduce the heat, cover with a lid, and simmer over low heat for 20 minutes.
