Instructions

Step 1

Boil the chicken until cooked through and let it cool. Remove the chicken meat from the bones and cut it into small pieces.
- 2
Step 2

Toast the shelled walnuts in a dry skillet for 5 minutes.
- 3
Step 3

Pass the nuts through a meat grinder or blend in a blender until smooth.
- 4
Step 4

Mince the garlic and add it to the nut mixture. Add 1 level teaspoon of each herb and spice, and mix.
- 5
Step 5

Add chilled broth to the nut mixture until it reaches the consistency of sour cream. For about 200 g of nuts, you need 250 ml of broth. Don't worry if the mixture seems too thin to you. After cooling, the sauce will thicken. To get rid of large nut pieces, blend the sauce again with a blender.

Step 6

Bring the sauce to a boil (do not let it boil!), add the chicken pieces, and stir. The sauce only needs to heat through evenly and infuse the poultry with all the spice aromas.

Step 7

Now refrigerate the satsivi for at least 4 hours, preferably overnight. Serve with fresh cilantro.
