Homemade sauce is simple and quick to prepare. Many people get confused—what exactly is satsevi: a sauce or a chicken dish? Actually, it's a dish, specifically a cold poultry dish. It's most commonly made with chicken. The dish gets its special piquancy from a nut-based sauce. To prepare Georgian-style chicken satsevi, I recommend using chicken wings: they have more meat and cook faster. The distinctive flavor comes from a blend of spices—coriander, khmeli-suneli, bay leaf, and others. The finished sauce can be stored in the refrigerator for several days.

Prepare the ingredients.

Place the wings in water, bring to a boil, and skim off the foam. Cook for about 15 minutes, then remove the wings and discard the broth.

Chop the onion coarsely and sauté with butter.

Then add the wings. Fry for about 15 minutes, then add the bay leaf and pour in a glass of broth. Simmer over low heat.

While the chicken is simmering, prepare the sauce. In a blender, grind the nuts, herbs, and garlic, then add coriander, cinnamon, red and black pepper, and khmeli-suneli.
