Rinse the turkey thoroughly, clean it, and place it in a pot. Cover with water and cook until done, approximately 1.5 hours.

We cool the cooked turkey, rub it with salt both inside and outside. Then we brush the top with vegetable oil and place it in a preheated oven at 220 degrees for about 15-20 minutes, until a nice golden crust forms.

Pour one and a half liters of turkey broth into the blender and add peeled walnuts, passed twice through a meat grinder.

Add salt, khmeli-suneli, minced garlic, and adjika.

Blend everything in a blender until smooth.

Pour the resulting mixture into a saucepan and heat over medium heat for about 8-10 minutes.

We cool the baked turkey, remove the bones, and cut it into pieces.

Place the turkey pieces into a deep dish and pour the sauce over them. Let it simmer for about 5 minutes. Leave to marinate for several hours, preferably overnight.

Serve turkey satsivi in a deep plate. Place the meat and pour the sauce over it. Garnish with walnut oil or fresh herbs on top.
