
Plum Satsivi
Description
The sauce takes just a few minutes to prepare. Plum satsebeli is easy to make, there are many recipes for this sauce, and mine is one of them. Follow the step-by-step instructions, but feel free to add your own creative touch. Serve chilled or at room temperature.

Prepare the ingredients.

Pit the plums. Cut the tomatoes into wedges. Peel the garlic. Clean the bell pepper and cut it into wedges. Remove the seeds from the chili pepper or leave them whole if you prefer it spicy.

Grind everything through a meat grinder, then place over heat.

After boiling, add all the spices to the sauce.

Season with salt to taste, add sugar, pour in vegetable oil, and continue simmering until thickened. At this point, the sauce can be strained for a smoother consistency, but it can also be left as is.

Chop the herbs, add to the sauce, and simmer until done, until the sauce reaches the desired consistency.

Pour the sauce into prepared sterilized jars, turn them upside down, and cover with a blanket until completely cooled. The plum satsivi turns out very tasty, moderately spicy and piquant. Any food with this sauce is simply "music"! I sincerely recommend you to try making it. This amount of ingredients yields about 1.2 liters of sauce.
