In a small bowl, beat the egg, sugar, salt, baking soda, and soft butter. Then add the milk and mix again.

Add the sifted flour (about 300 grams at first), and then more if needed. Knead the dough until it no longer sticks to your hands. Then wrap the dough in plastic wrap and refrigerate.

Clean and wash the fish. Cut it into small pieces, remove the bones. Place the fish in a pot, add wine, lemon zest, and a little salt, then cook over heat for 10 minutes.

We break the cooled fish into small pieces by hand, removing any remaining bones, and then add the cream cheese to the fish.

Next, finely chop the herbs, add them along with pepper and starch to the fish. Gently mix. Divide the chilled dough into two parts: one larger and one smaller.

Grease the pan with oil and dust it with flour. Roll out the larger part of the dough, place it in the pan, and prick it with a fork.
