Fish pie with phyllo dough

Description

The recipe won’t take much time. To make a fish pie you’ll need filo pastry and fillet of any red fish of your choice. Marinate the sliced fish pieces in lemon juice, then sauté the leeks and prepare the filling. Layer the pastry, fish, and leeks, sprinkling each layer with grated cheese. Bake the pie in a preheated oven. The fish pie can be served warm or cold. This amount of ingredients is calculated for a 25 × 12 cm pan. Serve cooled or slightly warm.

    First, prepare all the ingredients. The dough should be transferred from the freezer to the refrigerator the evening before. The same applies to the fish, if it is frozen.

    Cut the fish fillet into small pieces, add salt and pepper to taste, the juice of half a lemon, and rosemary. Mix, and let the fish marinate for 20–30 minutes.

    Slice the leeks into rings. In a skillet, melt a tablespoon of butter and sauté the leeks until tender. At the end of cooking, season with salt and pepper.

    Prepare the custard. In a bowl, mix the cream and two eggs until smooth. Add salt to taste.

    Grate the cheese using a fine grater.

    Line the baking pan with buttered parchment paper. Overlap several sheets of dough in the pan so that the edges hang freely. Brush each sheet with melted butter.

    Place half of the fish on the dough. Sprinkle the top with some grated cheese.

    Take two sheets of dough, moisten them in the glaze and crumple them like a sheet of paper, place them over the fish.

    Evenly distribute the leeks on top. Sprinkle with a small amount of cheese.

    Again, take two sheets of dough and, after moistening them in the sauce, place them over the onions. Place the remaining portion of the fish on top. Sprinkle with cheese.

    On top of the fish filling, place another 2–3 sheets of dough soaked in the sauce.

    Pour the remaining glaze over the top. Fold the edges of the dough and cover the pie. Brush with melted butter and sprinkle with sesame seeds.

    Bake in a preheated oven at 200 °C for 30–35 minutes. If the top begins to brown, cover the pie with parchment.

    Let the finished pie cool slightly, then remove it from the pan. The salmon and phyllo dough pie is ready; it can be served warm or cold.
