Fish pie on sourdough starter

Description

Perfectly pairs with tea and coffee. Even though preparing wheat sourdough takes quite some time, I highly recommend baking this pie. Whole grain flour and wheat sourdough make this pie not only filling but also nutritious, while fish mince combined with spices gives the pie a wonderful aroma. For decoration, you can use not only paprika but also sesame seeds, sunflower seeds, or cumin. Additionally, you can replace the olive oil in the dough with unrefined sunflower oil—it will turn out delicious as well. The baked goods are ready. Serve at the table.

    1. Prepare the starter: mix water with the starter culture, stir well. Add flour and mix again thoroughly. Cover with plastic wrap and let sit at room temperature for 8 hours.

    2. Dilute the starter with water and transfer it to the bowl of a mixer. Add salt, sugar, olive oil, sifted high-grade wheat flour, and whole grain flour. Knead the dough for 5 minutes at medium speed.

    3. Shape the dough into a ball and transfer it to a bowl greased with vegetable oil. Cover with plastic wrap and let it sit at room temperature for 3-4 hours.

    4. After an hour and a half, degas the dough by grabbing it at one edge, stretching it as much as possible, and folding it toward the opposite side of the bowl. Repeat the stretching around the bowl, then flip the dough over, smooth its surface, and leave it covered with plastic wrap until the end of bulk fermentation.

    5. Place the dough onto a floured work surface, gather the edges toward the center, flip it over, and cover with a lid. Let it rest for 15–20 minutes. Divide the dough into two unequal parts.

    6. Roll each portion into a ball and roll out the larger portion into a round shape. Transfer the dough to a baking pan greased with vegetable oil, forming a 2.5 cm high rim.

    7. Mix the fish mince with onion, nutmeg, coriander, and salt. Spread the chopped herbs over the mince. Roll out the second part of the dough into a thin layer and place it on top of the pie. Seal the edges with a fork and cover the pie with plastic wrap.

    8. Leave at room temperature for 1 hour. Before baking, brush the pie with tea, prick it with a fork, and sprinkle with paprika. Bake in a preheated oven at 180°C for 35 minutes. Let the pie cool completely.
