Fish croquettes

Description

Fish croquettes are among my children's top five favorite dishes. Considering how picky and difficult my kids are when it comes to food, fish croquettes have something to be proud of :) Actually, this makes me happy—fish croquettes, if prepared properly, aren't all that unhealthy, and they're not too much trouble to make either. So once or twice a month I treat the kids to their favorite dish. Though, generally speaking, my husband and I also eat croquettes with great pleasure, so it would be wrong to say I only make them for the kids :) Delicious thing—why wouldn't you love it?

    Ingredients.

    In a small saucepan, mix the milk and flour. Whisk thoroughly so there are no lumps.

    Place the saucepan over low heat and, whisking constantly, warm the resulting mixture until it thickens.

    Add two egg yolks, butter, cheese, and seasonings (salt, pepper, sage) to the hot mixture. Mix well.

    Flake the fully cooked fish with a fork, then fold it into the mixture. Chill the resulting mixture in the refrigerator.

    Now we proceed as follows. Take a tablespoon of our fish mixture.

    Coat our croquette in flour.

    Next, dip our croquette in a mixture of beaten egg, two beaten egg whites, and a small amount (1 tsp.) of water.

    Then roll the croquette in breadcrumbs.

    Similarly, form the remaining croquettes. Place the formed croquettes on a baking sheet (or several flat plates) and refrigerate for half an hour.

    Then fry the croquettes in a large amount of vegetable oil, for about 2–3 minutes on each side.

    This is roughly what the finished, pan-fried side of the croquette looks like.

    Place the finished croquettes on a paper towel so the excess fat drains off. Immediately after that, serve our croquettes.
