Fish cutlets in the oven
Description
There are many ways to prepare cutlets, and they all differ quite a bit. Every home cook has her own secret, and now I'd like to share my simple recipe for oven-baked fish cutlets that our entire family absolutely loves. This recipe is truly very easy, especially if you have a blender, as I do—using it makes preparing the mince quick and effortless. This wonderful appliance also finely grinds and slightly whips the mince, resulting in incredibly tender cutlets that resemble delicate fish fillet. I believe you can achieve a similar result with a meat grinder too, though you'll need to pass the mince through several times and then thoroughly beat it. And that's all the secrets! Now let's get started with the cooking, and my step-by-step photo recipe for oven-baked fish cutlets will guide you. By the way, cutlets baked in the oven turn out much tastier than pan-fried ones, and you won't have to stand by the stove for long—pretty great, isn't it?

Step 1

Cut the fish fillet into pieces and remove the bones. Now place the fish in the blender container and grind at high speed.

Step 2

Add the remaining ingredients: egg, onion, cheese, salt, and spices. For spices, I used basil, ground black pepper, dried garlic, coriander, and red pepper. You can add your own preferred spices. Mix everything at high speed.

Step 3

Now add two tablespoons of tomato paste and mix everything together one last time until smooth.

Step 4

With wet hands, start shaping the patties and place them on a baking sheet lined with parchment paper. Put the baking sheet in a preheated oven at 180 degrees and bake the patties for 20 minutes. The fish patties are ready, and now you can taste them.
