
Fish patties with parsley
Description
This recipe won't take much time. Preheat the oven to 200 degrees. Place the cod fillet in a baking dish and drizzle with 1 tablespoon of oil. Bake the fish in the oven until cooked through, for 15 to 20 minutes. Let it cool completely, then pat dry with a paper towel. In a large bowl, mix together the cod, egg, green onion, mayonnaise, lemon juice, mustard, breadcrumbs, parsley, hot sauce, 1/8 teaspoon salt, and 1/8 teaspoon pepper. Gently stir to combine. Shape the mixture into 8 patties. Place the patties on a baking sheet, wrap each individually in plastic wrap, and store in a resealable bag for up to 1 month. Thaw before cooking. To cook the patties, heat 1 tablespoon of oil in a large skillet over medium heat. Fry the patties until golden brown, about 2 minutes per side. Serve hot.
