
Fish patties made from pike

I've loved fish patties since childhood, when they served them to us for lunch at kindergarten. But, of course, homemade patties prepared at home are in a league of their own and have always reminded me of my grandmother—nowhere else have I ever tasted patties as delicious as hers. However, quite recently I discovered a wonderful recipe for pike fish patties that includes a little secret: we'll add beaten egg white to the minced fish, making the patties incredibly tender and almost airy. It seems like such a small detail, yet it makes a tremendous difference. Of course, my grandmother's patties still hold the top spot for me, probably due to the warm childhood memories and my boundless love for her, but this interesting yet simple pike fish patty recipe proudly takes second place.

First, we need to thoroughly rinse the fish under cold water to remove the mucus.

Now make two cuts along the backbone and on the belly, remove the innards, cut off the head, fins, and tail. Carefully separate the fillet from the backbone.

Place the fillet skin-side down and scrape off the meat using a knife or spoon, then transfer it to a deep bowl.

Peel the onion and cut into small cubes. Fry in a pan with butter until golden brown.

Now cut the stale baguette into small cubes and soak in milk for 10-15 minutes.

Grind the pike meat, bread soaked in milk, and onion through a meat grinder.

Mix all the ingredients, then pass the meat mixture through a meat grinder once again to make it more homogeneous.

Slightly beat the minced meat, add cream, salt, and season with ground white pepper.

In a separate container, beat the egg white into a thick foam, then transfer it to the minced meat and gently mix it in.

Wet your hands with warm water and start shaping the patties. Heat vegetable oil in a frying pan and fry the patties on both sides until golden brown. Then transfer them to a preheated oven at 170 degrees and cook for another 15-20 minutes. Serve the cooked patties with any side dish.
