
Fish cutlets from minced meat
Description
The recipe won't take much time. Fish patties are a strictly personal matter. I prefer making them myself to keep everything under control. The most important thing is to ensure there are no large bones in the fish patties. Otherwise, the whole taste will be spoiled by unpleasant prickliness. It's not very pleasant having to pick bones out of a finished dish. Serve hot.

If you have taken the fish whole or with bones, you need to separate the meat from the bones. The main thing is to remove the backbone and large bones. The smaller bones usually become soft during cooking. Cut the ready fillet into pieces and rinse.

Now we need a meat grinder. If you don't have one, use a blender. Place the fish pieces into the meat grinder container and grind into minced meat. Add the bread slice soaked in milk—either a piece of sandwich bread or white bread. You may also add vegetables, garlic, onion, etc. Knead the mixture thoroughly, beating in the eggs. Season with salt and pepper to taste. Add herbs and spices according to your preference.

Peel the onion and carrot. Finely dice the onion and grate the carrot. Pour oil into a frying pan and sauté the onion and carrot until golden. Then add these vegetables to the meat mixture and mix everything thoroughly once again.

We proceed to frying the cutlets. Place a frying pan with vegetable oil on the stove. Shape the minced meat into balls with your hands and flatten them so they cook more evenly. Put them into the hot pan and fry on medium heat on both sides until fully cooked.

Some people prefer to cover the frying pan with a lid while cooking cutlets, while others do not. It all depends on your taste. To use less oil, it's better to cover the cutlets with a lid so they simmer slightly. Serve the cutlets with any side dish.
