
Fish Aspic
Description
A delicious appetizer for any gathering. Fish aspic can be prepared in small molds and served in individual portions, or in one large mold so everyone can take as much as they like. In addition to fish, vegetables (fresh or boiled), fruits, and herbs are also added. The dish is tasty and nutritious, as fish contains phosphorus and other beneficial substances. Serve the appetizer at the table.

Wash the fish and clean it of scales, cut off the head, tail, and fins, slit the belly and remove the innards. Boil the eggs, then slice them.

Place the tail, fish, bones, and fillet in a pot. Cover with water (about 1–1.5 liters), place over heat, add onion, bay leaf, and carrot, and simmer for 30–40 minutes.

Strain the broth through a sieve, then carefully remove the carrots and fillet. Remove the bones from the fish, and strain the broth once more through cheesecloth.

Soak the gelatin in a small amount of cold water and let it bloom, then mix with the broth.

Place 1-2 egg slices on the bottom of the molds, add peeled carrot sliced into pieces, then chopped parsley and fish, and pour in broth.

Refrigerate for several hours to set. Before serving, remove the aspic from the molds and place on salad leaves; sprinkle with parsley.
