
Fish baked with sauerkraut

For this recipe, it's best to use very fresh, unfrozen fish—ideally still alive. Crucian carp is an excellent choice. Wash it thoroughly, scrape off the scales, remove the gills, but leave the head intact.

To remove the innards from the fish, take the sharpest and thinnest knife and make a cut along the backbone on the back, cutting through the ribs. Gut the carp. Be very careful not to cut your hands on the sharp rib bones.

If the fish contains roe, separate it from the entrails. You will also need the fat found inside. Peel and chop the onion. Squeeze the sauerkraut well so that as little juice as possible remains in it. If your fish does not contain roe, don't worry: you can almost always buy it at the fish market.

Take a frying pan, place it on the stove, turn on the heat, and wait until it gets hot. Pour sunflower oil into the pan and add chopped onion. Reduce the heat to medium and sauté the onion until it becomes soft and starts to turn golden.

When the onion is ready, add the sauerkraut to the same skillet. Now sauté the onion and sauerkraut for about ten minutes. Add vegetable oil as needed to prevent the sauerkraut from burning, and stir the vegetables regularly.

While the cabbage and onion are frying, chop the fish roe and fat with a knife. Mix both components and add them to the vegetables in the skillet. Sauté, stirring constantly. The roe cooks very quickly and will be ready once it acquires a characteristic pinkish-golden hue. Add salt, pepper, and bay leaf to the ingredients. Mix everything in the skillet thoroughly.

Turn off the heat, transfer the cabbage with caviar to a separate dish so it cools down faster. When the mixture becomes slightly warm, stuff the fish through the opening you made in its back. There's no need to sew up the opening, as this filling won't leak out.

Now rub the fish with salt and odorless vegetable oil. Line a baking sheet with special parchment paper for baking. Place the fish on it. Preheat the oven to 180 degrees Celsius (356 degrees Fahrenheit) and put the tray with the bream inside. Bake the fish for about an hour, depending on its size. At the end, when the fish is almost ready, switch the oven to the "Grill" mode to form a golden-brown crust on the bream. Serve the cooked fish hot, spread with mayonnaise, on a plate with fresh vegetables.
