Description

You can use any type of fish for cooking: sea or river fish, whole fish or pieces. In this recipe, I use fresh tomatoes, but if you're really short on time, regular tomato paste diluted with water will work as well. Serve the fish hot with mashed potatoes, porridge, or pasta.

    1. I wash the tomatoes and make cross-shaped cuts on them, place them in a pot, pour boiling water over them, leave for 1–2 minutes, then easily remove the skin.

    2. Cut each tomato in half, remove the seeds with a spoon, and blend the fleshy part in a blender with added basil sprigs.

    3. I put the resulting tomato sauce over low heat and simmer for 10 minutes after boiling, season with salt and pepper to taste, add a little sugar, and pour in vinegar.

    4. Peel the onion, rinse it under cold water, and slice it into half-rings. Peel the garlic cloves and finely chop them.

    5. Heat a pan with olive oil over medium heat, sauté the onion for about 10 minutes, and add the garlic a couple of minutes before the onion is done.

    6. I thoroughly wash the fish fillet and pat it dry with a paper towel, then cut it into small pieces.

    7. Place the fried onion with garlic as the bottom layer in a baking dish or heatproof pot, then arrange the fish pieces on top, and season with salt and pepper.

    8. Wash and finely chop the parsley, place it on the fish, pour the prepared tomato sauce over it, and season with a little salt and pepper again.

    9. Decorate with frozen green peas (optional) and place in a preheated oven at 200 degrees for 35 minutes.

    10. Transfer the cooked fish to a large plate and serve hot, garnished with fresh herbs.
