
Fish in the oven wrapped in foil
Description
The recipe won't take much time. You can bake this fish with absolutely any vegetables you like. However, the best combination is onion, bell pepper, and carrot. Place the sliced vegetables inside the fish cavity, so the fish absorbs their aromas and becomes especially delicious. You can prepare this foil-baked fish for a weekday dinner or for any festive occasion. Try it. Serve hot.

Prepare all the ingredients.

The vegetable cut can be any, just not too fine. Combine all the prepared vegetables, add 2-3 tablespoons of vegetable oil, salt to taste, spices, and mix well.

Clean the fish. Remove the innards, cut off the head, tail, and fins. Then rinse the fish under running water, dry it, and season with salt and ground black pepper. Coat the fish with oil (one teaspoon is enough), mixed with juice squeezed from a quarter of a lemon. Let it marinate on the counter for half an hour, then line a baking dish with foil, making sure there's enough to wrap the fish completely.

Place the vegetables inside the cavity of the bird, and arrange the remaining ones around it.

With a sharp knife, make several deep diagonal cuts across the fish, placing half a lemon slice into each cut. Insert a few lemon slices inside the fish cavity.

Seal the fish with the edges of the foil on all sides. Place in a preheated oven. Bake in foil for 25 minutes at 200 degrees. Then open the foil edges and bake for another 25–27 minutes, periodically basting with juice, until the fish develops a crispy crust to your liking.

The cooked fish can be served directly in the baking dish or transferred to a large plate together with the vegetables. Don't forget to divide the fish into portions using a spatula or knife.
