
Fish baked in the oven with sour cream and cheese
Description
The recipe won't take much time. Fish with sour cream is one of the classic combinations that can be used for stewing, baking, or frying. To prepare fish in the oven with sour cream and cheese, I used fresh pike-perch fillet. You can also bake cod, hake, or any other not-too-fatty fish. The sour cream and cream should be of medium fat content; the cream can even be richer than the sour cream. Serve hot.

Prepare the ingredients. Clean the fish, remove the bones and skin, gut it, and cut off the fins, tail, and head. We only need the fillet.

Cut the fish into small pieces (about 5 cm each). Season with salt, pepper, and add fish spices, for example, nutmeg. Let it sit for 15–20 minutes. Meanwhile, sauté the vegetables: slice the onion into half-rings, cut the red pepper into small pieces, and sauté them together in olive oil until soft and lightly browned.

Place the fish into a greased baking dish. On top, evenly arrange the sautéed onions and peppers.

Now for the dressing: mix sour cream with cream and herbs. You can add dill and parsley, but dill alone will be quite sufficient.

Pour the prepared sauce over the fish and vegetables, making sure everything is completely covered. Place in a preheated oven at 200 degrees. Bake until the sour cream sauce begins to bubble, then continue baking for another 15 minutes. In total, it will take about 35 minutes, depending on your oven and baking dish.

Then sprinkle the fish with grated cheese and return it to the oven. Bake until the cheese crust turns golden brown.

It's best to serve the fish with a light vegetable salad or side dish. Garnish with herbs before serving.
