
Fish stewed with vegetables

1. Wash the fish fillet, dry it, and cut into medium-sized pieces.

2. Heat a little oil in a skillet and sear the fillet, previously salted and peppered, over high heat for about 1 minute on each side. Remove from the skillet and set aside for now.

3. Prepare all the vegetables: wash them, peel, and chop.

4. Heat vegetable oil in a high-sided skillet or saucepan. Add the onion and sauté over medium heat until translucent.

5. Add sweet pepper, carrots, celery, garlic, and tomatoes.

6. Add salt and a pinch of pepper. Gently mix everything and simmer over medium heat for about 10–12 minutes. At the end, add chopped herbs.

7. Now prepare the dish in which you will finish cooking the meal. If you're using an oven, a clay pot is ideal. If you're cooking on the stovetop, use a heavy-bottomed saucepan. Place a layer of vegetables at the bottom.
