Fish with olives and tomatoes

Description

Heat oil in a large skillet over medium heat. Add onion and cook, stirring, until golden, 5 to 7 minutes. Add garlic and jalapeño pepper; cook 1 minute. Add tomatoes and 3/4 cup water; simmer until most of the liquid has evaporated, 6 to 8 minutes. Stir in olives and oregano. Season snapper fillets with salt and pepper. Reduce heat to medium, place fish into the prepared sauce in the skillet. Cover and cook until fish is done, 5 to 7 minutes. Serve fish with lime slices.
