Description

To prepare fish with beans, I recommend using white fish fillet—this could be hake, cod, or pollock. It's better to choose sea fish, as it generally has fewer bones. You can substitute the orange with lemon if you prefer a more sour rather than sweet-sour taste. For this recipe, use string beans (fresh or frozen), not canned ones. 1. Wash the fish fillet, dry it, season with salt and pepper, and place in the refrigerator for 20 minutes. 2. Pour boiling water over the string beans and let them sit for 5 minutes, then drain the water. 3. Cut the orange in half: squeeze juice from one half, and slice the other half into pieces. 4. Thinly slice the garlic into pieces. 5. Cut half of the butter into small cubes; melt the other half. 6. Take a sheet of parchment paper large enough to easily wrap the beans and fish. Lightly grease the center with melted butter. Place the fish fillet in the middle, arrange the beans around it, then sprinkle with tarragon, and place the garlic slices, orange pieces, and butter cubes on top. Wrap everything up tightly. Tip: Initially spread the parchment paper on a baking tray to prevent everything from falling apart when transferring. 7. Bake in the oven for 30–40 minutes at 200°C (390°F). Ready! Serve hot.
