1. Fillet the fish, removing the backbone and large bones, or use 4 ready-made fillets of any fish with tender white flesh. Thoroughly pat the fillets dry with paper towels to remove excess fat and moisture.

2. Heat a large skillet over medium heat, lightly greased with olive oil. Place the fish fillets in the skillet, pour freshly squeezed lemon and orange juice over them, and add ground allspice to taste. Cook for about 10 minutes, or until the fillets can be easily pierced with a fork. The dish can be served either hot or chilled.
