
Bulgarian-style fish with garlic
Description
You can use any low-bone fish – it will be delicious. It's convenient to choose small-sized fish for portioned serving. The fish is tasty both hot and cold.

Clean the fish, rinse and pat dry with paper towels. Season with salt and pepper to taste, sprinkle with lemon juice and let stand for about 15 minutes.

Make diagonal cuts about two centimeters deep in the fish bodies. Insert thin slices of garlic into the cuts. Place the fish in a greased baking dish, drizzle with oil, and bake at 200 degrees for 15–20 minutes, depending on the fish size. Do not overcook—the fish is done as soon as the flesh becomes opaque all the way through.

This fish goes perfectly with fresh and roasted vegetables, especially sweet peppers and tomatoes. I served the fish with a Shopska salad – after all, it's Bulgarian-style fish!
