
Fish in Satsivi Sauce
Description
Homemade sauce is simple and quick to prepare. Take sturgeon, wash and clean it thoroughly, then cut into portions, coat the pieces in flour, and fry in vegetable oil until cooked through. For the sauce, you will need garlic and onion, finely chopped and lightly sautéed in butter. Add flour to the mixture and continue frying together. Then let the ingredients cool, dilute with broth, and simmer for 10 minutes. Nuts, spices, vinegar, egg yolk, and herbs are finely ground, mixed together, and added to the sauce. The mixture is gently heated and stirred occasionally, but must not be brought to a boil. Fried fish is placed onto a serving dish, covered with the hot sauce, and then the entire dish is cooled. Before serving, garnish with fresh herbs. The finished sauce can be stored in the refrigerator for several days.
