
Ukrainian-style fish
Description
The recipe won't take much time. Pike-perch is one of my favorite types of fish, so I always try to keep track of and collect recipes featuring it. Many different ways of preparing pike-perch have ended up in my notebook, but this one is among the simplest and, at the same time, the most delicious. To bring out the full potential of lean pike-perch and make it truly shine, it must be cooked in a sauce—that's an axiom. In this case, we use heavy cream; as the fish bakes, it becomes infused with the cream, while forest mushrooms impart an absolutely amazing aroma. Add the delicate scents of aromatic herbs, and you'll understand why this Ukrainian-style fish recipe has become such a favorite. Serve hot.

Clean and wash the pike-perch.

Gut the fish, remove the head and tail, and separate the fillet from the bones.

Peel and chop the onion.

Melt a spoonful of butter and sauté the onion until translucent.

Add mushrooms to the onions and cook over medium heat until the liquid has completely evaporated.

Place the pike-perch fillet in a greased baking dish. Salt and sprinkle with herbs.

Salt the mushrooms, pepper them, mix, and place them on the fillet.

Pour in the cream and place in a preheated oven at 180°C for half an hour.

Serve with boiled potatoes or any other side dish to your taste.
