
Fish Moscow-style

The recipe won't take much time. In the national cuisine of any country, the culinary traditions of the capital always hold a special place. Old Moscow, or simply Moscow, cuisine began developing in the 17th century, but its roots go much deeper—back to the times of Ancient Rus. Recipes in those distant times were common for all social classes. The ingredients were also largely the same—exotic items such as expensive foreign wines, dried and cured fruits, sweets, of course, were affordable only to the nobility, but the main food products (meat, poultry, fish, milk, mushrooms) were shared by both the aristocracy and common people. Meat was not eaten often due to numerous fasting periods. However, fish, mushrooms, and dairy products were greatly favored. This recipe for fish Moscow-style is a vivid example of this tradition. Clean the fish, remove the guts, and wash it. Cut off the head, tail, and fins, then separate the fillet from the bones.

Season the pieces of fillet with salt and pepper, place in a bowl.

Slice the onion and mushrooms and sauté in a small amount of oil until golden brown.

Coat the fish in flour and fry on both sides as well.

Grease individual skillets, molds, or ramekins with sour cream. Place a layer of boiled, peeled, and sliced potatoes. Season with salt.

Place the fish on the potato, then add mushrooms with onions and 2-3 slices of boiled egg.

Sprinkle with grated cheese, pour sour cream over the top, and bake in a preheated oven at 220°C for 15–20 minutes.

After this time, the dish should look approximately like this. Generally, it's customary to prepare it with fried potatoes, but I think it's even better with boiled ones — less caloric and greasy. And as you can see, there's plenty of golden crust anyway :)
