
Moroccan-style fish
Description
Overall, Moroccan cuisine is known for its vibrancy, diversity, extensive use of spices and herbs, fruits and vegetables, greens, as well as seafood. It is widely famous beyond Africa—many restaurants around the world serve so-called "tagines," a traditional Moroccan dish of meat or fish cooked in a special clay pot that shares the same name. Recently, even in Russia (naturally, in major cities) it has become possible to find couscous—a grain as common in Morocco as buckwheat and millet are here. However, most ingredients required for preparing Moroccan dishes are still difficult to obtain locally. This Moroccan-style fish recipe is a pleasant exception to the rule. All the ingredients you'll need—medium-sized sea fish (such as sea bass), lemon, fresh herbs, not to mention onion and garlic—are readily available even in remote areas. So almost anyone can treat themselves to this delicious dish.

Step 1

Clean the fish, gut it, and wash it. Dry it. Rub with salt and pepper.

Squeeze the juice from half a lemon.

Peel the onion and garlic. Use a blender to chop the herbs and vegetables. Add lemon juice and oil, then mix.

Stuff each fish with the resulting mixture.

Place on a baking sheet lined with foil or parchment paper.

Bake in a preheated oven at 200°C until golden brown—approximately 20 minutes.
