
Royal-style fish
Description
Remember the scene with the tsar's "banquet" from the movie "Ivan Vasilievich Changes Profession"? Once, the whole country laughed at Savely Kramarov's character, sighing over the "foreign" caviar. But as soon as the scene showed huge platters with whole roasted fish, it was the viewers who began to sigh. This was no silvery hake—the best friend of every Soviet citizen. This was fish fit for a tsar! Times have changed, and today, perhaps, each of us can occasionally afford a whole pike, walleye, salmon, or even sturgeon (well, dreaming never hurts, at least!). Roasting a whole fish like this may seem complicated at first glance. In reality, the oven does most of the work, leaving you free to graciously accept your guests' grateful compliments. There isn't just one recipe for fish "fit for a tsar," but I suggest this particular version—with mushrooms. I think you'll be delighted with the result.

Slice the mushrooms and sauté in oil on a well-heated pan until all the liquid has completely evaporated.

When the mushrooms begin to brown, add the finely chopped onion.

And after a few more minutes, add the carrot grated on a coarse grater. Salt, pepper, and cook for about 5 minutes. Add the cream, mix well.

Slice the lemon into half-circles or quarters, if it's large.

Clean the fish, gut it (do not remove the head and tail!), wash it, and pat dry with paper towels. Make small but fairly deep cuts on the inside and insert lemon slices into them.

Salt, pepper, and sprinkle with coriander.

Stuff with mushrooms. Secure the slit with toothpicks or clips. Wrap tightly in foil and place in a preheated oven at 160°C for one hour.

After the specified time, open the foil and increase the temperature to 200°C. Cook the fish until a golden crust forms (you can spray it with vegetable oil). Serve by placing it on a flat dish and garnishing with lemon wedges, pickled vegetables, pickled mushrooms, olives, capers, etc.
