
Fish for shashlik
Description
If you want to please everyone for sure, the fail-safe option is red fish. It's not only delicious and filling, but also very healthy. You can also make excellent shashlik from white fish, either sea or river. The marinade can be based on soy sauce, dairy products, or onion and spicy mixtures. I prefer to enhance the fish flavor rather than overpower it, so I use lemon juice, garlic, and mustard.

Step 1

1. Place bamboo skewers in water and let them soak for 40–60 minutes. Finely chop parsley and put it into a bowl; add minced garlic, mustard, olive oil, juice of half a lemon, salt, and pepper. Mix everything thoroughly.

2. Cut the salmon fillet into cubes about 3 cm thick, and slice 2 lemons into rounds. Arrange the fish on skewers together with the lemon slices.

3. Brush the prepared marinade on both sides of the fish kebabs.

4. Grill the kebabs for 3-4 minutes on each side.

5. Serve the shashlik immediately, garnished with fresh herbs.
