
Fish in the oven
Description
Bersh is a type of pike-perch. It has white flesh and a delicate flavor. I bake the fish in pieces, covered with a layer of sautéed carrots and onions, after first searing the fish pieces until golden brown. Serve the fish after letting it cool slightly. You can accompany it with a side of potatoes and fresh vegetables.

1. Take ready-made fillet or previously debone the fish. Wash the fish and dry it with paper towels.

2. Cut the fish into medium-sized pieces. Heat a pan with vegetable oil and place the fish in it, then season with salt and pepper.

3. Fry the fish until golden brown on all sides.

4. Place the pieces of fish in a baking dish.

5. Meanwhile, peel the onion and slice it into half-rings. Grate the carrot on a coarse grater.

6. Into the pan where the fish was fried, add a little oil and place the vegetables. Sauté until soft, then season with salt and pepper, and add sugar.

7. Sprinkle the pike-perch with thyme, drizzle with lemon juice, then arrange the vegetables around. Place the fish in a preheated oven at 180 degrees for half an hour.

8. A few minutes before cooking is complete, remove the fish and sprinkle with grated cheese.
