Description

The recipe won't take much time. For the kvass, it's best to use rowanberries after the first frosts or slightly freeze them in the freezer to remove bitterness. You can prepare it using fresh, frozen, or even dried berries, which should be soaked for 24 hours beforehand. Keep in mind that this kvass has a low alcohol content, approximately 1 to 3 degrees, so it shouldn't be consumed if you're driving.

    Prepare all the necessary ingredients for making rowan kvass. Remove the berries from the stems, rinse them, drain in a colander, and let the water drip off.

    Place the rowanberries in a clean jar and add sugar.

    Pour 500 milliliters of boiling water over everything, stir. Leave it to cool down to a temperature of 25-30 degrees.

    Add the yeast and stir until completely dissolved. Cover the jar with gauze and place in a warm spot for 2-3 days to ferment.

    Pour the starter into a large jar, add the remaining warm water, and mix in sugar to taste. Stir well and let it sit for another two days. Strain the kvass, pour it into bottles, seal them, and store in a cool place for another 24 hours. Then it's ready to serve.
