
Smoked pork knuckle
Description
The recipe won't take much time. It's better to freeze the knuckle after smoking, as it will then slice more easily. You can also eat the knuckle hot—it tastes perfectly with various sauces. This knuckle is great for festive occasions, and it should be served sliced. Serve hot.

1. To make smoked pork knuckle, you first need to soak it in a brine solution. To do this, clean the knuckle thoroughly and prepare the brine separately: add 250g of salt to 3 liters of water.

2. Pierce the knuckle in several places with a knife, then leave it in the brine for 1.5–2 hours.

3. Now place the knuckle in the brine for at least 18 hours.

4. Then boil the pork knuckle for about 2 hours in salted water with spices, then rub with ground black pepper (and spices to taste).

5. Place the knuckle in the smoker. I had some fat, so I decided to smoke it together with the knuckle.
